Corned Turkey is a healthy alternative to corned beef and tastes just as good. The method is a very simple one, but do allow yourself enough time for the curing process.

In a saucepan, combine the ingredients below:

  • 1 quart water
  • 1 cup brown sugar
  • 2 cups pickeling spices
  • 10 cloves of garlic
  • ¼ cup of kosher salt

Bring the ingredients to a boil, remove from heat and cool COMPLETELY! Place a raw turkey breast (about 3-3.5#) in a non-reactive pan and add cooled spice mixture. Add enough water so the entire turkey is submerged. Cover, and store in refrigerator for up to 5 days. (The longer the turkey is corned, the stronger the flavor.)

Remove turkey from brine and pat dry. Roast as normal in a 375 degree oven until cooked thoroughly. Use as you would any corned beef dish:

  • Sandwiches
  • Reubens
  • w/ Cabbage and Root Vegetables
  • Hash

Corned Turkey Breast has about ½ the calories and about 1/6 the fat of Corned Beef Brisket.
